I wanted to make another foodie type thread where we can ramble about the topic without recipes. Random thoughts, favourite cookbooks or websites.. Whatever you want!
Questions about food preparation are totally welcome as well, would be happy to help!

AH you mean THAT kind of stuff, got it. Well, I hate following recipes, therefore I.. don't really have recipes I'm more the "oh food! let's be creative with it" type of person. That's why I suck at baking..

This doesn't have to be recipes, don't worry. It can just be about how you really like a specific kind of cheese. Random little food rants and such.
I'm so weird when it comes to recipes.. When I first was learning how to cook, those were all I used. Now, I'm much more creative and instinctively know what to do. I still use some recipes when it comes to baking, but with cooking I'm much more open with stuff. If I use recipes, its more of a starting point than anything.

I like frying fish - catfish especially. The only food I am known and loved for making among my friends is catfish and hushpuppies - it's good for a group because you can fry a lot before the oil is used up.

Ah, southernness! Catfish and hushpuppies along with chicken and dumplings are the only things I really remember my grandmother making frequently. I still looove hushpuppies, though she got annoyed at me that I used yellow cornmeal in them. Do you use white cornmeal?

The other day I made a nice dinner for my friends. I made:
steak cream of broccoli soup
and the big centerpieces:
my twice baked potatoes
and a cake!
It was so delicious but it took like five hours to make with cleanup and all that. Heck the potatoes took an hour and a half by themselves.

I haven't perfected the batter yet, but this is where it's at now: 1 cup self-rising cornmeal mix 1/2 cup self-rising flour 1 tablespoon sugar (or splenda) 1 large egg 1/2 cup milk or beer - milk makes them fluffier; beer adds tang 1/2 cup diced green onion 1/2 cup diced white onion 1 jalapeƱo pepper, chopped (optional) vegetable oil for frying I use the flour because I'm trying to get a more fluffy/slightly chewy texture (so that you can kinda squeeze them) but right now they're more like cornbread - pretty firm.

That is interesting! I've never heard of using beer. I can't find white cornmeal anywhere around here so far. I love my hushpuppies crunchy but still soft in the middle.
God, I'm going to have to make them sometime in the next week, but with lots of greens so that I don't die of fried goodness.

You confused me... I knew Hush Puppies as shoes, and as a dog... {Don't worry, I looked it up and now know about the food  }

Yeah, I too learned about that kind of hush puppies only a couple of days ago. ;D What a not-appetizing name, lol.
And poutine... So sinfully tasty, yum! ;D It's also quite good when you add some sausage slices in; merguez especially. ;D

Had hushpuppies before, most gross thing ever (apart from Vegemite) But maybe I'm not the right person to ask for culinary southerness... ...BF developed a taste for german Bratwurst-Walkers! -> like so: He almost managed to stop griefing about australian plain foods like disturbingly boring sauces and lamb with... nothing. He does not miss Vegemite or Burger King's awkward brother 'Hungry Jacks' and he does enjoy Wiener Schnitzel (vienna schnitzel) with mushroom sauce. He's already more german than me, cause I'm craving australian feta and lactosefree milk for 60ct We both declared war on my mum's 'old german cuisine' though. She has the interesting habit to add butter on carrots and bacon on red cabbage, which is plainly disgusting (and kinda kills the point of eating veggis). And when I must see another 'Schweinebraten' (pork roast), I swear I'll scream! Oh best german thing since I'm back = german cheesecake with 'Quark' (untranslateable fooditem... kinda like thick yoghurt/curd cheese although it is low in fat and has no salt added (which is the reason why it is usually used for sweet dishes), 'Quarkkuchen' just totally rules and wins big time against weird australian 'heavy cream' cake. I haz cheezecake? nom nom nom Oh and the MOST important thing - since I'm back I eat at last one small basket of red currant berries a day! They are not just my favorite fruit but my favorite food in generel and australia did NOT have any!!!!!!!!!!!! ( NOTE: eating one of those per day isn't that healthy... but I can' help it )

Hushpuppies are delicious! It just amounts to fried cornbread balls, basically. But with a lot more flavor. What's vegemite?

Vegemite is a by-product of beer manufacturing that is processed and packaged. It's a dark brown paste that is usually spread thinly on toast. It goes well with cheese. It's similar to Marmite or Cenovis, but anyone who enjoys one of them tends to hate the other two. It has a very strong and particular flavour. When you have a tummy bug and can't keep food down, a bit of Vegemite on toast is mild enough to keep down, but has enough taste to not be boring.

Ok. We don't have anything like that in the States (never seen Marmite or that other thing before either). The closest thing I've seen is Gnutella, Peanut Butter, or Marshmallow Cream. Probably not as healthy....

I looove Marmite! I've not seen Vegemite in the States so far though. Ah man, I haven't had Marmite in forever!
That cheescake looks delicious! That looks like the kind I adore. Hm, are the Australian ones like American (New York style) ones? I don't like ones that are too sweet, heavy, or have things added.
